Ooh, Baby Baby

Here're a couple more babyback rib pictures to tide you over. These have no sauce or glaze on them, they were just spritzed with a mopping liquid a few times after the bark was set, but other than that it's just meat and rub. That's the way I like them-- sauce on the side.











If you get a chance, send some good luck energy my way, I've got a big bbq meeting this weekend that could be a new business opportunity that would enable us to share our bbq with lots more folks. Fingers crossed.

Lastly, I added the super-catchy Connells song Slackjawed to the songs to cue by link located under Smoke Signals. They're an overlooked power-pop band out of the south that had a few semi-hits. Check it out.

Raised in the City


Folks, the 4th Annual Big Apple BBQ Block Party is just about 2 months away-- June 10th and 11th, and I suggest you start strategizing how to maximize your potentials now. This is a fantastic event for NYC that invites pitmasters from all over the country to come and vend their food, while there are seminars on 'cue, book signings, movies, music and, in case I didn't mention it the first time, lots and lots of barbecue. Great. Except for the fact that, historically, it has rained on at least one of the days of the block party and the lines are tremendous and snake around and curl and twist and eventually, you don't know if you are on the line you thought you were on and you start to wonder if you'll ever reach the promised nirvana of a few morsels from these pit-gods. $7 a plate, though they sell a Bubba Fast pass for about $130 that lets you cut through the lines, to some degree and avoid dealing with exchanging cash on the day of. This is a must-go event for any tri-state cue lovers, despite the fact that it can be a bit annoying.

Straight, No Chaser

Hope you all like the video of the Smoked Chicken I posted the other day-- I don't know why it has that sickly freeze-frame of that bag full of chicken since it starts with a picture of fire, but whatever. Hopefully things will be more 'prettier' in the future, like this shot of some Smoked Green (fresh) Ham and buttery roast potatoes.

Do You Believe in Magic?

Yes, my friends, the days are longer and the temperatures climbing which means it is time to put the sweaters on moth balls and get outside. That's exactly what the wife and I did last weekend. We packed Lois in the car and made our way out to eastern Strong Island (uh, Long Island).

We laid around on lounge chairs in the driveway like a coupla hillbillies. I have an old, cheap stereo in the basement and we cranked up the Kitty Wells and whispered sweet nothings to Wubby.

We cooked 6 racks of baby back ribs, 14 split chicken breasts, a brisket and the butt end of a fresh ham, along with a fatty (a big log of Jimmy Dean sausage).

I made a new wild cherry rub, and tested my new secret universal bbq sprinkle for the first time. Here are three racks. From left to right, with wild cherry, my universal sprinkle and Dizzy Pig Dizzy Dust. Next to that is a piece of bbq chicken w/ the cherry rub.

Seen Your Video

Hello, dear friends. Here's a new feature I'm thinking of adding to the site, what do you think? Is the video too big or anything? I used a mid-fi setting. It's just a quick test while the wife was out of town with the still cam. This was lunch for me and Hiroshi. Edit added Sunday a.m.: I've created a food ring which is linked at the bottom of the page-- I hope to see you there! Here's some video of a rack of ribs smoked over peach, apple, oack and hickory, frozen and consumed in Queens.
