Hold Me Tenderley: Lighting a fire

We went out of town for a few days to clear our heads and breathe some cherry wood smoke. We smoked some fresh kielbasa, baby back ribs and more.




We made a double smoked ham and cold smoked some cheese, so we made these little sandwiches for a late night snack.

That's a huge fire for a Klose pit. Should bring the temp up to about 400 degrees,

It did...I was getting ready to clean out the pit-- I hit it with the hose and steamed off the gunk and drained the pit. When I was all done, the vertical was locked in at 250, so I threw in the ribs. Yum...
